Halloumi Fries with Honey
Golden on the outside and squeaky inside, these are the easiest thing on the table. A drizzle of honey just before serving turns them from bar snack to something guests photograph.
Cut the block into batons no thicker than a finger so the outside crisps before the inside goes rubbery. Basket load: 12 batons in one layer, no overlap. Not suitable from frozen.
Ingredients
- 225 g halloumi, cut into 12 batons (1 cm x 1 cm x 7 cm)
- 1 tbsp olive oil
- 2 tsp smoked paprika
- 2 tsp runny honey, to serve
- Pinch of dried chilli flakes
Instructions
- Cut the halloumi block into 12 even batons and pat them dry with kitchen paper.
- Toss the batons in the olive oil and smoked paprika until every surface is coated.
- Preheat the air fryer to 200 C for 3 minutes.
- Lay the batons in a single layer in the basket, leaving a small gap between each one.
- Air-fry for 8 minutes, turning halfway, until deep golden and slightly blistered.
- Transfer immediately to a serving plate, drizzle with honey, and scatter chilli flakes on top.

Stuffed Mushrooms in One Layer
Button mushrooms stuffed with cream cheese, garlic, and herbs hold their shape beautifully in the air fryer and need no foil. The rule here is one layer, cup side up, so the filling sets rather than steams. Make ahead: fill them up to four hours early and refrigerate uncovered; air-fry to order. Contains dairy. Not suitable from frozen.
Ingredients
- 16 button mushrooms (about 4 cm wide), stalks removed
- 120 g full-fat cream cheese, softened
- 2 garlic cloves, finely grated
- 2 tbsp finely grated Parmesan
- 1 tsp dried thyme
- Salt and black pepper to taste (start with 1/4 tsp salt, 1/4 tsp pepper)
Instructions
- Wipe the mushrooms clean with a damp cloth and remove the stalks by snapping them off at the base.
- Mix the cream cheese, garlic, Parmesan, thyme, 1/4 tsp salt, and 1/4 tsp black pepper in a bowl until smooth.
- Spoon or pipe the filling into each mushroom cap, mounding it slightly above the rim.
- Preheat the air fryer to 190 C for 3 minutes.
- Place the stuffed mushrooms in one layer, filling side up. Do not stack.
- Air-fry for 10-12 minutes until the caps are tender and the filling is golden at the edges.

Pigs in Blankets from Frozen
The air fryer is genuinely better than the oven for frozen pigs in blankets because the hot circulating air crisps the bacon on all four sides without a single turn of the tray. Basket load: up to 18 in two snug but not touching rows.
Cook direct from the freezer, no thawing required. Contains pork and gluten. A classic anchor for any christmas recipes appetizers spread.
Ingredients
- 18 frozen pigs in blankets (chipolata wrapped in streaky bacon, pre-assembled)
Instructions
- Remove the pigs in blankets from the freezer. Do not thaw.
- Preheat the air fryer to 200 C for 3 minutes.
- Arrange in two rows in the basket, leaving a 5 mm gap between each piece so air can circulate.
- Air-fry at 200 C for 15-18 minutes, shaking the basket once at the 10-minute mark.
- Check that the internal temperature reaches 75 C or that the bacon is deeply caramelised and the sausage is cooked through with no pink inside.
- Rest for 2 minutes before serving on a warm plate.

Filo Wrapped Asparagus
One spear, one strip of filo, a little butter. These take four minutes to assemble and eight to cook, and they look like something from a caterer’s box. Use thin asparagus spears so the filo and the vegetable finish at the same time.
Basket load: 12 spears in one layer. Brush with butter rather than oil for the right flaky texture. Contains gluten and dairy. Not suitable from frozen.
Ingredients
- 12 thin asparagus spears, woody ends snapped off
- 4 sheets filo pastry, each cut into 3 long strips (12 strips total)
- 40 g unsalted butter, melted
- Flaky sea salt, 1/4 tsp, for finishing
Instructions
- Snap the woody end from each asparagus spear and wipe the spears dry.
- Brush one filo strip lightly with melted butter.
- Place an asparagus spear at the short end of the strip and roll it tightly at a slight diagonal so the filo spirals up the spear, then brush the end to seal.
- Repeat with the remaining spears and filo strips.
- Preheat the air fryer to 200 C for 3 minutes.
- Arrange the wrapped spears in a single layer in the basket.
- Air-fry for 8-10 minutes until the filo is golden and shatteringly crisp.
- Sprinkle with flaky salt immediately and serve upright in a tall glass or on a platter.

Spiced Chickpeas
Crunchy chickpeas are the gluten-free, vegan option that nobody feels sorry about eating. The key is dry chickpeas going into a hot basket; any moisture turns them chewy.
Pat them aggressively dry and leave the lid off for the last two minutes to finish the crunch. Basket load: one 400 g tin fills a 5-litre basket in one layer. Can be cooked from dried-and-precooked; not from frozen.
Ingredients
- 1 x 400 g tin chickpeas, drained and rinsed
- 1 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp ground coriander
- 1/4 tsp cayenne pepper
- 1/2 tsp fine salt
Instructions
- Drain and rinse the chickpeas, then spread them on a clean tea towel and rub vigorously until completely dry, discarding any loose skins.
- Toss the dried chickpeas with olive oil, cumin, smoked paprika, coriander, cayenne, and salt until every chickpea is coated.
- Preheat the air fryer to 200 C for 3 minutes.
- Tip the chickpeas into the basket in an even layer (no more than 2 cm deep).
- Air-fry at 200 C for 18-20 minutes, shaking the basket every 5 minutes.
- For the last 2 minutes, air-fry with the basket open slightly if your model allows, to drive off residual steam.
- Cool on a plate for 5 minutes before serving; they crisp further as they cool.

Potato Skins
Potato skins need the flesh scooped and the skin dried before the air fryer can do its job. Bake the potatoes the day before (in the oven or microwave), scoop, brush with fat, and refrigerate the shells. Party day is just a 10-minute air-fry.
Basket load: 8 skin halves in one layer or a slight overlap on the edges only. Fill with soured cream and chives at the table so they stay crisp. Contains dairy.
Ingredients
- 4 medium baking potatoes, baked and cooled
- 2 tbsp olive oil or melted butter
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/2 tsp fine salt
- 60 g grated mature Cheddar
- 4 rashers streaky bacon, cooked and crumbled
- Soured cream and chives, to serve
Instructions
- Halve the cooled baked potatoes lengthways and scoop out most of the flesh, leaving a 5 mm shell.
- Brush the inside and outside of each shell with olive oil or butter, then dust with garlic powder, smoked paprika, and salt.
- Preheat the air fryer to 200 C for 3 minutes.
- Place the shells cut side up in one layer in the basket.
- Air-fry for 8 minutes until the edges are crispy and the skin is rigid.
- Scatter Cheddar and bacon over the inside of each shell and air-fry for a further 2-3 minutes until the cheese melts and bubbles.
- Top with a small spoonful of soured cream and a pinch of chives just before serving.

Cauliflower Bites with a Dip
Cauliflower florets coated in seasoned breadcrumbs need a dry crumb (not a wet batter) so they stay in the basket rather than dripping through it. Press the crumb on firmly. Basket load: 20 medium florets in one layer, which just fits a 5-litre basket.
Serve with a two-minute sriracha mayo alongside. Contains gluten and eggs. Not suitable from frozen, but the florets can be crumbed and refrigerated four hours ahead.
Ingredients
- 1 small cauliflower, cut into 20 florets (each about 4 cm)
- 2 eggs, beaten
- 80 g panko breadcrumbs
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp fine salt
- 1 tbsp olive oil (to spray or brush the crumbed florets)
- For the dip: 4 tbsp mayonnaise, 1 tbsp sriracha, 1 tsp lime juice
Instructions
- Mix the panko, garlic powder, paprika, and salt in a shallow bowl.
- Dip each floret in beaten egg, let the excess drip off, then press firmly into the panko mixture on all sides.
- Brush or spray the crumbed florets lightly with olive oil.
- Preheat the air fryer to 200 C for 3 minutes.
- Arrange in a single layer in the basket; do not stack.
- Air-fry for 12-14 minutes, turning once at the halfway point, until the crumb is golden and the floret is just tender when pierced with a skewer.
- Stir together the mayonnaise, sriracha, and lime juice for the dip while the bites cook.
- Serve immediately with the sriracha mayo on the side.

Garlic Bread Slices
Cut a baguette into rounds rather than leaving it whole so every slice gets direct heat on both sides. The air fryer turns them crispier than the oven in half the time, with a bronzed garlic butter top that stays molten underneath.
Basket load: 10 rounds in a 5-litre basket, which may need one slight overlap at the edges only. Two quick batches cover a full party. Contains gluten and dairy. Can be frozen after buttering, then cooked straight from the freezer.
Ingredients
- 1 small baguette (about 280 g), cut into 20 rounds (1.5 cm thick)
- 80 g unsalted butter, softened
- 3 garlic cloves, finely grated
- 2 tbsp flat-leaf parsley, finely chopped
- 1/4 tsp fine salt
Instructions
- Beat together the softened butter, garlic, parsley, and salt until smooth.
- Spread 1 teaspoon of garlic butter generously onto one cut side of each bread round.
- Preheat the air fryer to 190 C for 3 minutes.
- Place 10 rounds butter side up in the basket (they can just touch at the edges).
- Air-fry for 5-6 minutes until the tops are golden and the edges are crisp.
- Remove and repeat with the remaining 10 rounds.
- Serve warm within 5 minutes of cooking.

Pastry Twists
Ready-rolled puff pastry, a stripe of filling, a quick twist, and the air fryer does the rest. Choose any savoury filling: Parmesan and rosemary, sun-dried tomato paste, or pesto.
The visual hook is the golden spiral and they stand upright in a glass for the table. Basket load: 10 twists in one layer. Cook in two batches of 10. Contains gluten and dairy. Freeze uncooked and air-fry from frozen, adding 3 minutes.
Sub tip: use gluten-free puff pastry and the result is identical.
Ingredients
- 1 sheet ready-rolled puff pastry (320 g), thawed if frozen
- 3 tbsp finely grated Parmesan
- 1 tsp dried rosemary, crumbled
- 1 egg, beaten, for brushing
- Flaky sea salt, 1/4 tsp, for topping
Instructions
- Unroll the pastry sheet on its paper. Brush the entire surface with beaten egg.
- Scatter Parmesan and rosemary evenly over the top half of the sheet.
- Fold the bottom half of the pastry up over the filling and press gently.
- Cut the rectangle into 20 strips (each about 1.5 cm wide) using a sharp knife or pizza cutter.
- Hold each strip at both ends and twist 4-5 times, then press the ends down firmly so the twist holds.
- Preheat the air fryer to 200 C for 3 minutes.
- Place 10 twists in a single layer in the basket, not touching.
- Air-fry for 10-12 minutes until puffed, golden, and cooked through. Repeat with the second batch.

Chorizo and Potato Skewers
Thread alternating cubes of waxy potato (par-boiled for 6 minutes first) and sliced chorizo onto short metal or soaked wooden skewers. The chorizo fat bastes the potato as both cook in the hot air. Basket load: 8 skewers laid flat in a 5-litre basket.
Skip wooden skewers longer than 15 cm or they poke the element. Contains pork and sulphites from the chorizo. Not suitable from frozen. Serve with a small bowl of smoky aioli.
Ingredients
- 300 g waxy potatoes (Charlotte or similar), cut into 2 cm cubes
- 200 g cooking chorizo, cut into 1.5 cm rounds
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp fine salt
- 4 tbsp mayonnaise, 1 tsp smoked paprika (for aioli)
- 8 short metal or soaked wooden skewers (15 cm max)
Instructions
- Par-boil the potato cubes in salted water for 6 minutes until just tender but not falling apart, then drain and cool.
- Toss the potato cubes and chorizo rounds in olive oil, smoked paprika, and salt.
- Thread alternating pieces onto each skewer: 3 potato cubes and 2 chorizo rounds per skewer.
- Preheat the air fryer to 200 C for 3 minutes.
- Lay the skewers flat in the basket in one layer.
- Air-fry for 12-15 minutes, turning once halfway, until the chorizo is caramelised at the edges and the potato is golden.
- Stir smoked paprika into mayonnaise for the aioli and serve alongside.

- Air-fry for 7-8 minutes until the crumb is deep golden and the olive is hot through.

Sweet Potato Rounds with Feta
Slice sweet potato into 1 cm rounds, oil them, air-fry, then top with crumbled feta, a drizzle of honey, and a pinch of chilli. The visual is a perfect circle of orange topped with white, which photographs beautifully on a dark slate.
Basket load: 16 rounds in one layer in a 5-litre basket. Contains dairy. Not suitable from frozen. Rounds can be cooked and topped up to 2 hours ahead; warm in the air fryer for 2 minutes before serving.
Ingredients
- 2 medium sweet potatoes (about 500 g total), scrubbed and cut into 1 cm rounds

- Preheat the air fryer to 200 C for 3 minutes.
- Lay the rounds in one layer in the basket.
- Air-fry for 12-14 minutes, flipping once at the halfway point, until the edges are slightly caramelised and the centre is tender when pressed.
- Transfer to a serving platter and immediately top each round with crumbled feta.
- Drizzle honey over the rounds, scatter chilli flakes and torn mint, and serve within 10 minutes.

Parmesan Crisps
Four ingredients, three minutes of cook time, and the result is a lacy golden wafer that can stand in a glass like a Christmas tree decoration. Portion the Parmesan into small mounds directly onto a parchment liner in the basket.
Basket load: 6 mounds per batch (they spread to about 6 cm each). Cook in two batches for 12 total. Watch closely: they go from golden to burnt in under a minute. Contains dairy.
Not suitable from frozen, but store in an airtight tin for up to 24 hours.
Ingredients

- 1 tsp dried rosemary, finely crumbled

- 1/4 tsp garlic powder
Instructions
- Line the air fryer basket with a parchment liner.
- Mix the Parmesan, rosemary, black pepper, and garlic powder in a small bowl.
- Spoon 6 level tablespoons of the mixture into the basket, spacing them 3 cm apart, and flatten each mound gently into a 5 cm circle.
- Preheat is not needed here: place the basket in the air fryer and cook at 180 C for 3-4 minutes, watching through the window after the 3-minute mark.
- The crisps are ready when they are evenly golden and the bubbling has stopped.
- Slide the parchment out of the basket and cool the crisps on it for 2 minutes before lifting (they firm up as they cool).
- Repeat with the remaining mixture for the second batch.

Stuffed Dates in Bacon
Medjool dates, a sliver of almond or a cube of blue cheese inside, wrapped in half a rasher of streaky bacon. Sweet, salty, sticky. Thread two on a cocktail pick so guests can grab without touching the bacon. Basket load: 16 dates in one layer.
The bacon crisps in 8 minutes. Contains pork, tree nuts or dairy depending on the filling. Not suitable from frozen. Make the filling and stuff the dates up to 6 hours ahead; wrap in bacon on the day and air-fry to order.

- Arrange the dates in one layer in the basket, bacon-seam side down.
- Air-fry for 7-9 minutes until the bacon is golden and crispy on all sides.
- Transfer to a plate, drizzle with a small amount of honey, and insert cocktail picks before serving.

Courgette Fries
Courgette fries work in the air fryer only if two conditions are met: the sticks are no thicker than a finger, and a dry crumb coats them (no wet batter).
Salt the raw sticks for 10 minutes and blot them dry before crumbing; that step draws out the moisture that would otherwise steam the inside. Basket load: 16 sticks in one layer. Contains gluten and eggs. Not suitable from frozen. Serve with tzatziki.
Ingredients
- 2 medium courgettes (about 400 g total), cut into 8 cm x 1 cm sticks
- 1 tsp fine salt (for drawing out moisture), plus extra to taste
- 2 eggs, beaten
- 80 g panko breadcrumbs
- 30 g finely grated Parmesan
- 1 tsp garlic powder
- 1 tbsp olive oil, for spraying
Instructions
- Lay the courgette sticks on a tray, scatter with 1 tsp salt, and leave for 10 minutes.
- Blot the sticks very thoroughly with kitchen paper; they should feel noticeably drier.
- Mix panko, Parmesan, and garlic powder in a shallow dish.
- Dip each stick in beaten egg, then press firmly into the panko mixture on all sides.
- Spray or brush the coated sticks lightly with olive oil.
- Preheat the air fryer to 200 C for 3 minutes.
- Arrange in one single layer with small gaps between each stick.
- Air-fry for 10-12 minutes, turning once, until the crumb is golden and crisp.

Polenta Chips
Pre-cooked polenta from a tube is one of the air fryer’s best-kept secrets. Slice it into chunky chips, oil it, and the outside turns into a firm golden crust while the inside stays creamy. No boiling, no baking. Basket load: 20 chips in one layer.
Naturally gluten-free and vegan. Not suitable from frozen. Serve with a small dish of marinara or pesto. Make-ahead: sliced chips can sit oiled in the fridge for up to 4 hours before air-frying.
Ingredients
- 500 g ready-cooked polenta (tube), cut into sticks (8 cm x 1.5 cm x 1.5 cm)
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp fine salt
- 2 tbsp finely grated Parmesan, for finishing (optional)
Instructions

- Toss the chips in olive oil, smoked paprika, garlic powder, and salt until coated on all sides.
- Preheat the air fryer to 200 C for 3 minutes.
- Lay the chips in one layer in the basket, leaving small gaps; they must not touch or they will stick together.
- Air-fry for 15-18 minutes, turning once at the halfway mark, until the outside is firm, golden, and slightly crisp at the edges.
- Scatter Parmesan over them immediately after removing from the basket.
- Serve within 5 minutes with marinara sauce on the side.

Padron Peppers
Six minutes, one ingredient, a pinch of salt. Padron peppers are the fastest thing on this list and they never fail to impress. One in ten is hot; that is the game and guests love it.
Basket load: 250 g fills a 5-litre basket in an almost-single layer and that is fine for peppers because a little overlap does not affect the result. Vegan, gluten-free. Not suitable from frozen.
Ingredients
- 250 g padron peppers, stalks left on
- 1 tbsp olive oil
- 1/2 tsp flaky sea salt
Instructions
- Toss the peppers in olive oil until glistening all over.
- Preheat the air fryer to 210 C for 2 minutes.
- Tip the peppers into the basket; a slight overlap is acceptable.
- Air-fry for 6-7 minutes, shaking the basket once at 4 minutes, until the skin is blistered, charred in spots, and the peppers have softened slightly.
- Tip immediately onto a plate, scatter generously with flaky salt, and serve at once.

Gnocchi Crisped in One Layer
Shop-bought gnocchi, tossed in oil and seasonings and air-fried, turns into something that tastes like a tiny fried dumpling. The outer shell goes taut and golden while the inside stays pillowy. Basket load: 300 g in one layer, no stacking.
Use fresh or shelf-stable gnocchi; both work. Contains gluten and eggs (check the packet). Not suitable from frozen. Serve with a bowl of warmed marinara. This also makes a solid entry for a christmas snacks ideas table.
Ingredients
- 300 g fresh or shelf-stable gnocchi (not frozen)
- 1.5 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp dried rosemary
- 1/4 tsp fine salt
- 2 tbsp grated Parmesan, for finishing

- Preheat the air fryer to 200 C for 3 minutes.
- Spread the gnocchi in one layer in the basket; they should not overlap.
- Air-fry for 13-15 minutes, shaking the basket every 5 minutes, until the outside is golden and firm with a slight crunch when tapped.
- Transfer to a bowl, toss immediately with grated Parmesan, and serve with marinara for dipping.

Halloumi and Pepper Skewers
Alternating cubes of halloumi, red pepper, and green pepper on a short skewer look like edible Christmas tree ornaments: red, white, green. The halloumi holds its shape through the high heat while the peppers soften and char lightly at the edges.
Basket load: 8 skewers flat in one layer. Contains dairy. Not suitable from frozen. Thread and refrigerate up to 4 hours ahead.
Ingredients
- 225 g halloumi, cut into 2 cm cubes (about 16 cubes)
- 1 red pepper, cut into 2 cm pieces (about 12 pieces)
- 1 green pepper, cut into 2 cm pieces (about 12 pieces)
- 1.5 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp smoked paprika
- 1/4 tsp black pepper
- 8 short skewers (15 cm max)
Instructions
- Cut the halloumi and peppers into even 2 cm pieces and pat the halloumi dry.
- Toss halloumi and peppers together in olive oil, oregano, smoked paprika, and black pepper until coated.
- Thread each skewer with: pepper, halloumi, pepper, halloumi, pepper (alternating colours and cheese).
- Preheat the air fryer to 200 C for 3 minutes.
- Lay the skewers flat in one layer in the basket.
- Air-fry for 10-12 minutes, turning once at the halfway mark, until the halloumi is golden and the peppers are tender and slightly charred.
- Serve immediately.

Breaded Artichoke Hearts
Tinned artichoke hearts, drained and dried, crumbed in seasoned panko, and air-fried until golden. They taste rich and meaty. Drain the tin well and press each heart dry before crumbing or the moisture steams the crust from inside. Basket load: 12 hearts in one layer.
Contains gluten and eggs. Not suitable from frozen (use tinned, not frozen, artichokes for this). Serve with lemon aioli.
Ingredients
- 1 x 400 g tin artichoke hearts in water, drained, halved and dried
- 2 eggs, beaten
- 80 g panko breadcrumbs
- 30 g finely grated Parmesan
- 1 tsp garlic powder

Instructions
- Drain the artichoke hearts, halve them, and press each piece between layers of kitchen paper until very dry.
- Mix the panko, Parmesan, garlic powder, thyme, and salt in a shallow bowl.
- Dip each artichoke piece in beaten egg, shake off the excess, then press firmly into the panko mixture on all sides.
- Spray the coated pieces with olive oil.
- Preheat the air fryer to 200 C for 3 minutes.
- Arrange in one layer in the basket.
- Air-fry for 10-12 minutes, turning once, until the crumb is deep golden and crunchy.
- Serve with lemon aioli: 4 tbsp mayo, 1 tsp lemon juice, 1 small garlic clove finely grated.

Mushroom Arancini from Frozen
Frozen mushroom arancini (risotto balls) from any supermarket go from freezer to golden in 14 minutes in the air fryer, no oil, no preheating required. The basket heat crisps the crumb on all sides without the soggy base you get from the oven tray.
Basket load: up to 12 balls in one layer for a 5-litre basket, which means they just touch. Contains gluten, dairy, and eggs. Cook directly from frozen. Serve with a small bowl of warmed arrabiata or truffle mayo.
Ingredients
- 12 frozen mushroom arancini (shop-bought, about 400-450 g)
- Arrabiata sauce or truffle mayo, to serve
Instructions
- Remove the arancini from the freezer. Do not thaw.
- Place directly into the air fryer basket from frozen, in one layer.
- Air-fry at 200 C for 14-17 minutes (no preheating needed), shaking the basket once at 10 minutes.
- Check that the crumb is evenly golden and the centre is piping hot; cut one open to verify if unsure.
- Serve immediately with arrabiata sauce or truffle mayo on the side.

Frequently Asked Questions
What Christmas appetizers work in an air fryer?
Any appetizer with a dry crumb, a pastry wrapper, or a natural outer skin works well in the air fryer. Good examples include halloumi fries, pigs in blankets, pastry twists, stuffed dates in bacon, arancini from frozen, parmesan crisps, and crumbed cauliflower bites.
Avoid wet batters that can drip through the basket grate, and skip anything that needs a very large surface area, like a whole baked brie without wrapping.
How full should an air fryer basket be?
For anything crumbed, wrapped, or skewered, a single layer with small gaps between each piece is the rule. Overcrowding traps steam and you get a soft result instead of a crispy one.
The only exceptions in this collection are padron peppers and chickpeas, which can sit in a slight pile because their natural skins handle a little steam without turning soggy.
Can you cook party food from frozen in an air fryer?
Yes, and the air fryer is particularly good at it. Pigs in blankets, mushroom arancini, pastry twists, and buttered garlic bread rounds all go straight from the freezer into the basket with no thawing required. Add 3-4 minutes to the standard cook time and always verify the internal temperature reaches 75 C for any meat product.
How do I keep air fryer food hot for guests?
A low oven set to 100 C keeps most air-fried food hot and crisp for up to 15 minutes. Place cooked batches on a wire rack over a tray so air circulates underneath; a solid tray makes the bases steam and go soft.
The two exceptions are parmesan crisps and breaded olives, which should go straight to the table because their thin crumb softens quickly in any enclosed space.
