Peel all three satsumas and separate the segments completely.

Arrange 2 single segments near the top of the plate, standing them slightly upright, for the triangle eyes.

Place 3 segments in a downward-pointing V shape between the eyes to form the nose.

Curve the remaining segments along the lower third of the plate in a wide arc for the jack-o-lantern smile, turning some slightly sideways to fill gaps.

Serve immediately or refrigerate the plate for up to 1 hour.
