Push a lollipop stick firmly into the flat base of each marshmallow so it holds without wobbling.
Melt the green candy melts with half the coconut oil in a microwave in 30-second bursts, stirring between each. Repeat with the purple melts in a separate bowl.
Dip each marshmallow pop into the chosen colour, turning it slowly to coat all sides. Let the excess drip back into the bowl.
While the coating is still wet, press two candy eyeballs into the top third of the marshmallow. Scatter a pinch of sprinkles or sanding sugar over the lower half for texture.
Stand each pop upright in a tall glass, a styrofoam block, or lean them against each other on parchment to set.
Once the coating is firm (about 15 to 20 minutes), use the edible pen or a toothpick dipped in gel food colouring to draw a jagged mouth below the eyes.
Display upright in a decorative holder until serving.
