Ingredients

  • 10 fresh mint leaves plus 1 sprig for garnish
  • 1/2 lime cut into 4 wedges
  • 2 teaspoons white sugar or 1/2 ounce simple syrup
  • 1 cup crushed ice
  • 4 ounces club soda
  • 1 lime wheel for garnish

Instructions

  • Drop the mint leaves and 2 of the lime wedges into a sturdy highball glass.
  • Add the sugar and press down firmly with a muddler or the back of a wooden spoon for about 15 seconds, until the mint smells bright and the lime has released its juice.
  • Squeeze in the remaining 2 lime wedges and drop the spent rinds into the glass.
  • Fill the glass with crushed ice all the way to the rim.
  • Pour the club soda over the ice and stir once with a long spoon, lifting the mint from the bottom so it moves through the drink.
  • Garnish with a lime wheel and mint sprig and serve immediately, with a straw.

Good to Know

Make the mint and lime base for a whole pitcher ahead of time, but hold the soda and ice until each glass is poured so it never goes flat.
