Virgin Bellini
Ingredients
- 2 ounces white peach puree chilled
- 4 ounces sparkling white grape juice or non-alcoholic sparkling wine chilled
- 1 thin peach slice for garnish
Instructions
- Chill both the peach puree and the flute in the freezer for a few minutes before building.
- Spoon the peach puree into the bottom of the chilled flute.
- Pour the sparkling grape juice slowly down the inside of the glass, letting it layer over the puree.
- Stir once, gently, with a long spoon to combine without losing all the bubbles.
- Garnish with a thin peach slice resting against the rim.
- Serve immediately, while it is still fizzing.
Good to Know
For a crowd, portion the puree into flutes ahead of time and keep the sparkling bottle capped until the actual toast.
