Strawberry Rose Spritz

Prep Time 10 minutes
Cook Time 8 minutes
Total Time 28 minutes
Makes 1 serving (syrup makes 6)

Ingredients

  • 1 cup fresh strawberries hulled and chopped (makes extra syrup for 6 drinks)
  • 1/2 cup granulated sugar
  • 1/2 cup water
  • 1/2 teaspoon rose water plus more to taste
  • 1 tablespoon fresh lemon juice
  • 4 ounces chilled sparkling water or non-alcoholic sparkling wine
  • Ice
  • 1 fresh strawberry sliced, for garnish
  • 1 small edible rose petal optional

Instructions

  • Combine the chopped strawberries, sugar, and water in a small saucepan over medium heat.
  • Simmer 8 to 10 minutes, stirring occasionally, until the strawberries break down and the syrup coats the back of a spoon.
  • Strain through a fine mesh sieve into a jar, pressing on the solids, then let it cool 10 minutes at room temperature.
  • Stir the rose water into the cooled syrup, starting with 1/2 teaspoon and adding more a drop at a time.
  • Fill a wine glass or spritz glass with ice.
  • Pour in 2 tablespoons of the strawberry rose syrup and the lemon juice.
  • Top slowly with chilled sparkling water, pouring down the side of the glass, then give one gentle stir.
  • Garnish with the strawberry slice fanned on the rim and the rose petal, then serve right away.

Good to Know

The syrup keeps in a sealed jar in the fridge for a week, so one batch covers six drinks across the holiday.
