Strawberry Basil Lemonade

Prep Time 10 minutes
Cook Time 8 minutes
Total Time 38 minutes
Makes 4 servings

Ingredients

  • 1 1/2 cups fresh strawberries hulled and halved
  • 8 fresh basil leaves plus extra for garnish
  • 1/2 cup granulated sugar
  • 1/2 cup water
  • 3/4 cup fresh lemon juice about 4 to 5 lemons
  • 3 cups cold water
  • Ice
  • Lemon slices for garnish

Instructions

  • Combine the strawberries, basil leaves, sugar, and 1/2 cup water in a small saucepan over medium heat.
  • Simmer 6 to 8 minutes, mashing the strawberries as they soften, until the mixture turns syrupy and coats the back of a spoon.
  • Strain through a fine mesh sieve into a pitcher, pressing on the solids, then discard what's left in the sieve.
  • Stir in the lemon juice and the 3 cups cold water.
  • Taste and adjust with a little more sugar if needed, stirring until fully dissolved.
  • Chill the lemonade in the fridge at least 20 minutes, or serve right away over plenty of ice.
  • Fill four mason jar glasses with ice, pour the lemonade over, and garnish each with a lemon slice and a basil leaf.

Good to Know

The strained syrup keeps 4 days in the fridge on its own, so you can mix lemonade fresh by the glass all week.
