Pumpkin Jack-O-Lantern Fruit Platter
- 8 medium mandarins or clementines peeled and segmented (keep segments intact)
- 1 kiwi fruit peeled and cut into a short cylinder, then halved lengthways to form a stem shape
- 16 blueberries
- 10 green seedless grapes halved lengthways
- 1 tablespoon fresh lemon juice
Choose a large white or pale platter (at least 30 cm wide). Set the kiwi piece at the top centre to act as the pumpkin stem.
Fan mandarin segments outward from the base of the kiwi in a rounded pumpkin shape, overlapping slightly and keeping the curve even on both sides.
Use 6 blueberries arranged in two triangles to form the eyes of the jack-o-lantern face.
Place 4 blueberries in a curved line below the eyes to form the nose triangle.
Arrange the halved green grapes in a wide zigzag line below the nose to form the jagged mouth.
Brush any cut grape or kiwi surfaces lightly with lemon juice to slow browning.
Serve immediately or cover directly with cling film and refrigerate for up to 2 hours.
