1/2cupwhite wine vinegar
1/2cupgranulated sugar
4fresh thyme sprigsplus 1 for garnish
1.5ozpear thyme shrubfrom above
3ozchilled sparkling water
ice
Instructions
Combine the chopped pears, vinegar, sugar, and thyme sprigs in a small saucepan over medium heat.
Bring to a gentle simmer and cook for 8 minutes, stirring occasionally, until the pears soften and the liquid smells sharply of vinegar and thyme.
Remove from the heat and let the mixture cool completely, about 30 minutes.
Strain through a fine-mesh strainer into a jar, pressing on the pears to extract the liquid, and discard the solids; the shrub keeps refrigerated for two weeks.
Fill a wine glass with ice.
Pour 1.5 ounces of the pear thyme shrub over the ice.
Top with the chilled sparkling water and stir once.
Garnish with a thin pear fan balanced on the rim and a fresh thyme sprig.
Good to Know
Pears brown fast once chopped; toss them with a splash of lemon juice before they hit the pan if you are not cooking them right away.
