Peach Bellini Mocktail

Makes 1 drink (puree makes enough base for about 8 drinks)

Ingredients

  • 2 ripe peaches peeled and pitted
  • 1 tbsp honey
  • 1 tsp fresh lemon juice
  • 4 oz chilled sparkling white grape juice or club soda to top
  • 1 thin peach slice for garnish

Instructions

  • Puree the peaches with the honey and lemon juice until completely smooth; strain through a fine mesh sieve for a silkier texture if you like.
  • Spoon 2 tablespoons of the peach puree into the bottom of a champagne flute or coupe glass.
  • Top slowly with 4 ounces of chilled sparkling white grape juice, pouring down the side of the glass.
  • Stir once, gently, so the puree swirls through without losing its fizz.
  • Garnish with a thin peach slice balanced on the rim and serve right away.

Good to Know

No ripe peaches handy? A cup of peach nectar works as a shortcut; just skip the honey, since the nectar is already sweet.
