Monster Veggie Tray

Prep Time 20 minutes
Total Time 20 minutes
Makes 1 board, serves 10 to 12

Ingredients

  • 400 g broccoli cut into small florets
  • 200 g baby carrots
  • 200 g cucumber sliced into 5 mm coins
  • 2 cherry tomatoes for the eyes
  • 1 strip yellow bell pepper about 5 cm long, for the mouth
  • 250 g store-bought green goddess dressing or tzatziki for dipping

Instructions

  • Pour the dip into a small bowl (about 12 cm diameter) and set it in the centre of a large flat board.
  • Arrange broccoli florets in a dense oval shape around the bowl, packing them closely to form the monster body.
  • Place baby carrots in two radiating lines from the upper sides of the broccoli oval to form outstretched arms.
  • Lay cucumber coins in overlapping rows along the lower portion of the oval and along the arm lines to look like scales or texture.
  • Set two cherry tomatoes above the bowl, pressing them into the broccoli, for the eyes.
  • Curve the yellow pepper strip below the tomatoes into a grinning mouth shape, tucking it between the broccoli florets to hold it in place.
  • Serve immediately or refrigerate the assembled board, uncovered, for up to 2 hours.
