Lavender Gin Spritz

Prep Time 15 minutes
Cook Time 5 minutes
Total Time 30 minutes
Makes 1 drink (syrup makes enough for about 16 to 20 drinks)

Ingredients

  • 1 cup granulated sugar
  • 1 cup water
  • 2 tbsp dried culinary lavender
  • 1.5 oz gin
  • 0.5 oz fresh lemon juice
  • 3 oz chilled prosecco or sparkling water to top
  • Fresh lavender sprig and lemon wheel for garnish

Instructions

  • Make the lavender syrup first: simmer the sugar, water, and lavender over medium heat for about 5 minutes, until the syrup coats the back of a spoon.
  • Strain out the lavender and let the syrup cool completely, about 15 minutes, before using (it keeps covered in the fridge for up to 2 weeks).
  • Fill a wine glass or rocks glass with ice.
  • Add 1.5 oz gin, 0.5 oz of the cooled lavender syrup, and 0.5 oz fresh lemon juice.
  • Top with 3 oz chilled prosecco or sparkling water.
  • Stir once, gently, and garnish with a small lavender sprig and a lemon wheel before serving.

Good to Know

Make the syrup a full batch at once; it is the only slow step, and once it is chilled, every spritz afterward takes under a minute.
