Ingredients

  • 12 fresh jalapeños halved and seeded
  • 8 ounces cream cheese softened
  • 1 cup shredded sharp cheddar cheese
  • 6 slices bacon cooked and crumbled

Instructions

  • Heat the oven to 400°F and line a baking sheet with parchment paper.
  • Wearing gloves, slice the jalapeños in half lengthwise and scrape out the seeds and white ribs with a small spoon.
  • Mix the cream cheese, cheddar, and crumbled bacon together in a bowl until evenly combined.
  • Spoon the filling into each jalapeño half, mounding it slightly above the rim.
  • Arrange the filled halves cut-side up on the baking sheet.
  • Bake for 18 to 20 minutes, until the peppers have softened and the filling is bubbling and lightly browned on top.
  • Let cool for 5 minutes, since the filling holds its heat longer than the pepper, before serving.

Good to Know

Stuff the peppers up to a day ahead and refrigerate uncovered; bake straight from cold, adding 3 to 4 extra minutes.
