Hibiscus Ginger Fizz

Prep Time 10 minutes
Total Time 40 minutes
Makes 2 servings

Ingredients

  • 2 hibiscus tea bags or 2 tablespoons dried hibiscus flowers
  • 1 cup boiling water
  • 2 tablespoons honey or sugar
  • 1 tablespoon fresh lime juice
  • 4 ounces ginger beer chilled
  • Ice
  • Lime wheels and a few whole hibiscus flowers for garnish

Instructions

  • Steep the hibiscus tea bags in the boiling water for 5 minutes, until the liquid turns a deep, clear red.
  • Remove the tea bags, stirring in the honey while the tea is still warm so it dissolves completely.
  • Let the hibiscus tea cool to room temperature, about 15 minutes, then chill it in the fridge at least 20 minutes.
  • Fill two collins glasses or copper mugs with ice.
  • Divide the chilled hibiscus tea and lime juice between the glasses.
  • Top each with ginger beer, pouring slowly so the fizz doesn't overflow.
  • Garnish with a lime wheel and a hibiscus flower, then serve.

Good to Know

Brew the hibiscus tea up to 2 days ahead and keep it covered in the fridge, it only gets more vivid.
