Prep Time 15 minutes
Cook Time 40 minutes
Total Time 55 minutes
Makes 4 servings

Ingredients

  • 2 pounds russet potatoes cut into 1/4-inch fries
  • 2 tablespoons neutral oil
  • 1 tablespoon cornstarch
  • 1 teaspoon salt
  • 2 cups shredded rotisserie chicken
  • 1/2 cup buffalo hot sauce
  • 1 tablespoon butter
  • 1 cup shredded Monterey jack cheese
  • 1/4 cup ranch or blue cheese dressing
  • 1/4 cup crumbled blue cheese
  • 1/4 cup diced celery
  • 2 tablespoons sliced green onion

Instructions

  • Heat the oven to 425°F and line a sheet pan with parchment paper.
  • Soak the potatoes in cold water 15 minutes, drain, and pat completely dry.
  • Toss with oil, cornstarch and salt, spread in a single layer, and bake 35 to 40 minutes, flipping once, until deep golden and crisp.
  • While the fries bake, melt the butter in a small saucepan, stir in the buffalo sauce, and warm over low heat 2 minutes.
  • Add the shredded chicken to the sauce and toss until every piece is coated and heated through, about 4 minutes.
  • Pile the hot fries onto a platter and scatter the Monterey jack over them while hot so it melts into the pile.
  • Top with the buffalo chicken, then drizzle with the ranch dressing.
  • Finish with blue cheese crumbles, diced celery and green onion, and serve immediately while the cheese is still pulling.

Good to Know

Swap ranch for blue cheese dressing if your table leans that way; both work with the same amount, it is only a matter of taste.
