Preheat the oven to 400°F and line two large sheet pans with foil.
Scrub the potatoes under cold water and pat completely dry.
Pierce each potato 4 to 5 times with a fork, then rub all over with olive oil and sprinkle with coarse salt.
Arrange the potatoes in a single layer on the prepared sheet pans, leaving space between each one.
Bake for 45 to 60 minutes, until a knife slides into the center with no resistance and the skin feels crisp.
Let the potatoes rest for 5 minutes, then slice each one lengthwise and fluff the inside with a fork.
Arrange the toppings, butter, sour cream, cheese, bacon, chives, broccoli and salsa, in small bowls along a table or counter.
Keep the potatoes warm in a slow cooker set to low or wrapped loosely in foil until serving.
Let guests split their own potato and build it from the toppings bar.
Good to Know
Bake the potatoes the morning of the party and reheat wrapped in foil in a 300°F oven for 15 minutes; the skins stay crisp and nobody waits an hour before eating.
