  2. Heat a non-stick pan over medium heat and coat with cooking spray or coconut oil.

Layers of vanilla yogurt and crushed chocolate cookies stand in for soil and gravestones in a glass. A rectangular plain cookie pressed upright into the top layer is the headstone, and crumbled dark Oreos make the dirt. Two blueberries peeking out of the crumble are ghost eyes. Takes five minutes flat and requires no heat. Contains gluten, dairy and soy.

Ingredients

  • 240 g (1 cup) plain full-fat vanilla yogurt
  • 6 chocolate sandwich cookies (such as Oreo), 4 crushed coarsely and 2 left whole
  • 4 fresh blueberries
  • 2 tsp honey

Instructions

  1. Divide the yogurt evenly between two 240 ml (8 oz) glasses or jars, about 120 g each.
  2. Spoon the crushed cookie crumble over the yogurt in each glass, covering the surface completely to look like dark soil.
  3. Press one whole chocolate sandwich cookie upright into the crumble of each glass, near the back, so it stands as a gravestone. If it wobbles, press it in slightly deeper.
  4. Tuck 2 blueberries into the crumble near the front of each glass so just the tops peek out, like ghost eyes rising from the dirt.
  5. Drizzle 1 tsp honey over each parfait. Serve immediately or refrigerate up to 2 hours before serving.
