Most high-protein breakfast casseroles load up on meat and cheese to hit their numbers. This one uses Greek yogurt and cottage cheese instead. Twenty-six grams of protein per serving without needing a pound of sausage. The yogurt makes it creamier than a standard egg casserole and adds a slight tang that cuts through the richness.
You wouldn’t know there’s yogurt in this unless someone told you. It doesn’t taste like yogurt once it’s baked. It just makes the texture softer and more custardy.
The cottage cheese adds more protein and creaminess. If you hate cottage cheese curds, blend the mixture before baking. It breaks down completely.
Using Greek yogurt means you can use less cheese than most casseroles. The yogurt provides the creaminess that cheese normally does, so you’re not sacrificing texture for protein.
This holds up all week in the fridge. The yogurt doesn’t separate or get weird when you reheat it.
What You Need


Greek yogurt: One cup, full-fat or 2%. Not nonfat. It’s too thin and doesn’t add enough richness to replace the extra cheese.
Cottage cheese: One cup, 4% milkfat. This is your protein booster. Blend it smooth if you don’t want curds in the final casserole.
Eggs: Ten large eggs. Combined with the yogurt and cottage cheese, this is how you hit 26 grams of protein per serving.
Turkey sausage: Half pound, cooked and crumbled. Optional. Skip it for vegetarian or swap for chicken sausage.
Vegetables: Spinach, tomatoes, onion. Two cups spinach wilts down to almost nothing, so don’t be stingy. Cherry tomatoes burst while baking and create little flavor pockets.
Cheese: One cup shredded mozzarella. Mozzarella is mild and melts well without overwhelming the yogurt’s subtle tang.
How to Make It


Heat olive oil in a skillet. Cook the turkey sausage until browned, breaking it up as you go. Takes about 6-7 minutes. Remove to a plate.
Same skillet: add diced onion, cook 3 minutes. Add garlic and spinach, cook until the spinach wilts. Takes 1-2 minutes. Remove from heat.
Whisk together eggs, Greek yogurt, cottage cheese, milk, salt, pepper, oregano, and red pepper flakes in a very large bowl. The cottage cheese breaks down as you whisk. If you want it completely smooth, blend these ingredients first.
Grease a 9×13-inch dish. Spread the cooked sausage and vegetables evenly. Scatter the cherry tomato halves over the top. Pour the egg-yogurt mixture over everything. Sprinkle mozzarella on top.
Bake at 375°F for 40-45 minutes. The center should be set with no jiggle, edges golden, cheese melted and bubbly. Internal temp hits 160°F.
Wait 10 minutes before cutting. Eggs need time to finish setting.
Can I taste the yogurt? No. Once baked, it just adds creaminess and a very slight tang that balances the cheese. It doesn’t taste like yogurt.
What about regular yogurt? Greek yogurt is thicker and has more protein. Regular yogurt will make this too wet. If you must use it, reduce the milk to 1/4 cup.
I don’t like cottage cheese. Replace it with an additional 1/2 cup Greek yogurt and 1/2 cup shredded cheese. You’ll lose some protein but it still works.
It came out watery. You didn’t cook the vegetables first to remove their water, or you used nonfat dairy products which are too thin.
Can I make this dairy-free? No. The Greek yogurt and cottage cheese are the foundation. Without them, it’s a completely different recipe.
Making It Different
Skip the sausage, double the vegetables. Add mushrooms, zucchini, or bell peppers.
Use feta instead of mozzarella for stronger flavor. Or Swiss, Gruyere, Mexican blend.
Swap turkey sausage for chicken sausage, ground turkey, or diced cooked chicken breast.
Use kale instead of spinach. Add roasted red peppers or sun-dried tomatoes.
For even higher protein: use 12 eggs instead of 10, or add 1/4 cup unflavored protein powder to the egg mixture.
What to Eat It With
This is protein-heavy, so pair it with lighter sides. Fresh fruit, toast, sliced avocado, roasted potatoes, green salad. Coffee or tea.

- 1 cup plain Greek yogurt (full-fat or 2%)
- 1 cup cottage cheese (4% milkfat)
- 1/2 cup whole milk
- 1/2 pound turkey sausage (cooked and crumbled)
- 2 cups fresh spinach (chopped)
- 1 cup cherry tomatoes (halved)
- 1/2 cup diced onion
- 1 cup shredded mozzarella cheese
- 2 cloves garlic (minced)
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional)
- Cooking spray or butter for greasing
- Preheat oven to 375°F. Grease 9×13-inch baking dish with cooking spray or butter.


- Heat 1 tablespoon olive oil in large skillet over medium heat. Add turkey sausage, breaking up with spoon. Cook 6-7 minutes until browned and cooked through. Remove to plate.
- In same skillet, add diced onion. Cook 3 minutes until soft. Add minced garlic and chopped spinach. Cook 1-2 minutes until spinach wilts. Remove from heat.
- In very large bowl, whisk together eggs, Greek yogurt, cottage cheese, and milk until smooth. Cottage cheese will break down as you whisk. For completely smooth texture, blend in blender first.
- Add salt, pepper, oregano, and red pepper flakes to egg mixture. Whisk again.
- Spread cooked sausage and vegetables evenly in greased baking dish. Scatter halved cherry tomatoes over top. Pour egg-yogurt mixture over everything. Sprinkle shredded mozzarella on top.
- Bake 40-45 minutes until center is set (no jiggle), edges are golden, cheese is melted and bubbly, and internal temperature reaches 160°F.
- Let cool 10 minutes before cutting.
