  3. Beat egg whites with cream of tartar, adding the remaining 50 g sugar gradually to stiff peaks.
  4. Fold the whites into the yolk mixture in three additions and spread into the pan, baking 10-12 minutes until springy.
  5. Turn the hot sponge onto a sugared towel, peel off the parchment, and roll it up from the short end with the towel inside; cool completely.
  6. Whip 240 ml cream to soft peaks, unroll the cooled sponge, spread with cream, and reroll without the towel; chill 1 hour.
  7. Melt the chocolate with the remaining 240 ml cream for ganache, cool until spreadable, frost the log, and drag a fork lengthwise for bark texture.
